Pesto Chicken Pizza

Originally posted on 4/24/14.

Hey, this is my contribution to throw-back Thursday!  As I was reading through the recipe again I got really hungry.  Might have to get the grandsons over to help me make this again really soon.

Not an original recipe (see source below) but we all get to tweak away at someone else's in this recipe blog world, don't we?  This is a great quickie dinner that you can throw together in about 30 minutes or so if you have the ingredients on hand.  Or you can just send your daughter and her fiance out to the grocery store to get the stuff for you while you clean off the kitchen island so that there is room to actually EAT there.
Ingredients:
Pizza Dough (home- or ready-made)
Basil Pesto
Cooked Chicken (I used a rotisserie chicken from my local grocery store)
Shredded mozzarella cheese
1.  Preheat oven to temperature for your pizza dough.
2.  Spread dough onto pan or pizza stone; sprinkle corn meal on pan first so your pizza doesn't stick.
3.  An extra step if you are using the refrigerated dough, is to pre-bake it for 6-8 minutes before adding your toppings.
4.  Spread pesto, chicken and cheese over the crust.
5.  Bake for suggested time for dough, about 8-10 minutes.
Adding a salad would be a great idea.

How to Cook Spaghetti Squash

Okay, I admit it.  I've never tried spaghetti squash before this.  But I've always wanted to.  It always looks so cool....all those little curly fibers.  But I never had motivation to try it until I had to go wheat-free.  You know, rice pasta is nice and all, but it's a little bland.  So I was really hoping for something interesting here.  I got it, and it's pretty versatile to boot.  You can serve it with a sauce like you would pasta or just top it with Parmesan cheese and chopped basil, or serve it as a side with salt, pepper, and butter or ghee.

And it's just so stinkin' fun to scrape all those little fibers!!!  Seriously, I giggled.

How to Cook Spaghetti Squash

Preheat oven to 350 degrees.  Cut a spaghetti squash in half lengthwise.  Scoop out seeds and loose flesh and discard.  Place cut-side down on a foil-lined baking sheet.  Bake for one hour.

Remove from oven and carefully turn the squash halves over to cool.

When it has cooled enough for you to handle it, take a fork and scrape the squash flesh towards the middle.  (This would be so fun for kids to help with!)

You just made spaghetti!!  Now wasn't that fun?!

Candy Corn Fruit Salad

I am not a fan of Candy Corn, but I love this salad.  It is simple:

1/2 cup Sour Cream
1 cup Marshmallows
1/2 cup Coconut

Mix together and place in the bottom of a glass bowl, layer 4 cans Mandarin Oranges and 2 cans Pinapple on top. Gently mix together just before serving.

Cookie Bars

I have trouble finding the energy to make cookies.  I have never enjoyed taking batches out and putting them back in over and over and over again.  Lucky for my kids I found making cookie bars to be much easier and is now pretty much the only way I make cookies.

It is simple!  Take your favorite cookie recipe that makes approximately 5 dozen cookies, follow the directions but add 1/4 cup cornstarch to the dry ingredients (this helps keep the cookies soft).  Press dough into a greased 15x10 inch jelly-roll pan.  Bake at 375 degrees for 20 mins.

Enjoy!

French Toast Roll Ups

Sometimes I like to try recipes that just look fun!  The precooking steps on this one would be fun to do with kids, especially rolling out the bread slices.  You can experiment with any fillings that have similar consistencies to the ones listed.

Ingredients:
8 slices bread (should be somewhat soft--I used whole wheat)
Nutella, cream cheese, jelly/jam, peanut butter
2 eggs
3 Tbps. milk
1/3 cup granulated sugar
1 heaping tsp. ground cinnamon
butter for skillet
maple syrup for serving

1.  Trim the crust off the bread slices.  This goes quick if you use a pizza cutter.  Then roll each bread slice flat with a rolling pin.
2.  Take about 2-3 teaspoons of your filling (Nutella, cream cheese, jelly, etc.) and spread down one end of the bread slice (see the pic above).  Roll up the bread tightly, starting on the filling end.  Do this with all the bread pieces.
3.  Whisk the egg and milk together in a loaf pan.  In another loaf pan combine the sugar and cinnamon.
4.  In a skillet, melt the butter over medium heat.  When skillet is ready, use tongs to dip roll-ups one at a time into the egg mixture, allowing the excess to drip off.  Place in hot, buttered skillet and cook on all sides until golden brown.  Cook just a few at a time so you can keep an eye on them.
5.  When each roll-up is done, remove it from the pan with tongs and roll in the cinnamon sugar mixture.

Serve warm with maple syrup, or even just plain!

3 Layer Ice Cream Cake

This is the most awesome ice cream cake, and it's so easy to make! You have to try this!

Ingredients:
1 pack of Oreos
3 quarts of your favorite ice cream
1 box ice cream sandwiches - keep in freezer until ready to use
Cool Whip

Instructions:
1. You will need a springform pan. Spray the pan with non-stick cooking spray. Cut strips of wax paper to line the pan. The spray will help the wax paper stick to the pan.

2.. Put about half of the Oreos in a blender and blend to make fine crumbs, or small chunks, whichever you prefer. (You can also put the Oreos in a bowl or zip lock bag and crush with a wooden mallet. Sometimes I use the bottom of a drinking glass and gently tap to break the cookies into small pieces.) Save a tablespoon of crumbs or chunks to sprinkle on top of the final layer. Add a little water to your crushed Oreos so that they stick together a bit and you can press them into the bottom of your springform pan. I used a little too much water by accident and made almost an Oreo brownie. : )  It was good, but I prefer the bottom more crumbly instead of gooey.

3. Cut several ice cream sandwiches into 4ths like the picture shows. You will need enough to line the whole pan. That will depend on the size of your springform pan. I used about 8 ice cream sandwiches for mine. I personally like the WalMart brand better than some of the name brands I have tried. They have a good shape and texture for this. It's a messy job, so be prepared to ruin a few and eat them.

4. Line the pan with the pieces of ice cream sandwich. Make sure the outside rounded edge of the icecream sandwich is facing up and against the pan. This will be what everyone sees when you take off the springform pan, so try to make it pretty.

5. Scoop out about 3/4 of the ice cream for your first layer and put into a bowl. The whole quart would be too much. If you have a smaller springform pan, then maybe half of it would do...I have bought the fancy pints of ice cream for making these in a smaller springform pan. Stir the ice cream until soft and smooth. We have been known to add chunks of brownie, nuts, huge Oreo chunks, or whatever we are craving in each layer! Yum! Pour into pan. You may want to put it in the freezer for 15-30 minutes or so to let that layer get firm. if you don't, your layers will not be straight.

6. Repeat step 5 for the 2nd layer.

7. Repeat step 5 for the 3rd layer.

8. Spread Cool Whip over the top. Try to make it look pretty. I make little peaks on mine by using the back of the spoon. I can't explain that...just try to make it look pretty. : )

 9. Sprinkle some Oreo crumbs on the top. This is as creative as I get, but I'm sure you could add some special touches to make it look really pretty.

10. Put it in the freezer and let it freeze hard for 24 hours. Every time I have made it in the morning and tried to serve it that night, it was not frozen enough and it was more of a blob than beautiful layers. Take out of freezer and remove the outside of the springform pan and the wax paper. Cut and serve! Everyone will love it! : )

Notes:

1. I did not freeze each layer before I added the next because I was trying to hurry, and I ended up with waves of color and not exact layers. (See picture below.) No one cared though and we ate every last bite of this!

2. My favorite one I have made had pink, white and green layers. The colors were beautiful with the Oreo bottom and the Cool Whip topping. I used a strawberry ice cream, but the ice cream was white, so we added a drop or two of red food coloring to make it pink. Then we used a vanilla bean vanilla ice cream for the middle. For the 3rd layer, we used a mint chocolate chip ice cream, but the ice cream was white, so we added a few drops of green food coloring. It was stunning and the flavors were amazing!

3. Feel free to add cookie pieces, brownie chunks, nuts, mini marshmallows, or whatever you like in your ice cream!

Almond Bites

There are days, and sometimes  weeks, where you are pulled in many directions and can't seem to get things done as efficiently as you would like, much less remember everything that has to be done.  This morning was one of those times.  I work with the youth in our church, specifically the girls, and we alternate with the boys' leadership in providing refreshments for a sort of bi-monthly meeting.  Well we haven't had one this summer, for various reasons, so my brain had not realized that it was our turn to bring the treats until this morning at church.  The meeting is in 3 hours and I don't shop on Sundays.  So, what do I have on hand?  Nature Valley Almond Bars!  Perfect.  And just so you know, there are a few others who are raiding their pantries today--girls included--so the youth will not perish from lack of goodies after their meeting.  This is a great idea for a quick treat and it's healthy--almonds are a Super Food, remember.

Ingredients:
Nature Valley Sweet & Salty Almond Bars

1.  Remove the wrapper from the bars.

2.  Cut each bar into thirds and then cut each third diagonally (I cannot type that word without thinking of Harry Potter).

3.  You now have cute little triangles of chewy goodness, and since these particular bars have an almond butter icing kind of thing going on on the bottom layer, they look even more presentable as a treat to take to a meeting, etc.

Another good quick treat:  Cut Fig Newtons diagonally into cute little triangles and cover in powdered sugar. Yummy!

Pureed Fruit Muffin

School is starting and kids need a good healthy breakfast to get the day started right!  This muffin recipe and a smoothie is a great way to get your kids the nutrition they need. The kids love it, in fact my 9 year old son can make it himself!  It is healthy, vegan, and YUMMY!

Pureed Fruit Muffins

1/2 c. coconut oil (you can use butter but I like coconut oil better)
3/4 c. dark brown sugar (or sucanat)
1 c. pureed fruit (fresh or bottled)
1 1/2 c. whole wheat flour
1 t. soda
1/2 t. salt

Mix all ingredients together and bake at 350 for 20 minutes.

Note: Some fruit suggestions are: applesauce, apples, bananas, peaches, and pineapple.  I also will add spices such as cinnamon, nutmeg, clove, and ginger.  This recipe is very forgiving so play with it and find what your family loves.  Enjoy!

Homemade Playdough

I love this recipe! It makes the BEST playdough! And it's is safe for little ones, has a nice texture to play with, and it comes out of clothes and carpet with just a moist rag. Such a fun, cheap easy activity for kids!

Homemade Playdough

Ingredients:
1 cup all purpose flour
2 tsp cream of tartar
1 cup water
1/2 cup salt
1 TBSP oil
food coloring (I have used liquid drops and gel. Either one works great!)

Directions:
1. Mix flour, cream of tartar and salt together in a saucepot (no heat yet!). Add water, oil and food coloring.

2. Stir mixture together. Make sure you have the right amount of food coloring so that it is the color you want. This is the only chance you have to add more coloring!

3. Turn heat on high and stir constantly until it forms a ball. This happens really fast!

4. As soon as it has formed a ball and most of the wetness is gone, dump playdough onto a counter or cutting board. Let cool for a few minutes, and knead to until smooth. If you overcook it, the dough will be a little dry. I like to take it off the heat with a little wetness still showing in the dough, and then knead it until smooth. (See picture and explanation below.)

5. Store in a plastic bag. Have fun! (I put it in a plastic bag while still warm, so it keeps the moisture and does not dry out.)

Note: I always make a double batch, or a few batches with different colors. One batch will not be quite enough to share happily with 2 or 3 children. More is better!

Source: Adapted from Cookin' With Home Storage by Vicki Tate

This is what it looks like as it starts forming a ball. See how it is still wet? At this stage, I would flip the dough over and let the wet part touch the hot pan and then take it out with just a few wet spots on the dough. Once you make your first batch, you'll understand how fast it forms a ball, and when to take it out of the pan!

The Best Chocolate Chip Cookies Ever!

Forget about your diet! You have to try these! They will make you so happy!

The Best Chocolate Chip Cookies Ever!

Cream together:
1 cup CRISCO shortening (Sometimes I use ½ cup shortening and ½ cup butter)
1 cup brown sugar
½ cup white sugar

Mix in:
1 tsp vanilla
2 eggs

Add:
2 ¼ cups white flour (you can use white wheat flour…it’s very good)
1 tsp baking soda
1 tsp salt
Chocolate chips (as many as you like!) I used "chunks." You can add chopped nuts too!

Put spoonfuls on a baking sheet and bake at 350 degrees until just barely starting to brown on the edges. They will look a bit underdone to the average person! Take out of oven and let them sit for a few minutes on the pan. (DO NOT over cook if you want them to be chewy and soft.)

Pour a glass of milk and ENJOY!!!! YUM YUM!!!

Notes:
1. One batch makes 2 dozen large cookies. Trust me, you'll want to make a double batch.

2. These make fabulous M&M cookies too! You can add anything you like in these cookies! White chocolate chips and macadamia nuts, or dark chocolate and pecans...the possibilities are endless!

Source: My amazing mom! (Brenda Joyner) She taught my sister and I how to make these when we were really young, and we were famous for our delicious cookies!

Frozen Grapes

I am one of those moms....you know the ones that don't like high fructose corn syrup, food dye, ....etc.  So we usually don't have Popsicle in our home unless they are homemade.  I don't know why but homemade sometimes just seems like too much work, so I found an easier way.  Frozen Grapes!  They have a wonderful icy crunch, are prefect for those hot days, and super easy!

Wash Grapes well (I use food wash for grapes to get off all the pesticides)
Pull off the vine and place individually on a cookie sheet
Freeze

It is that easy.  Once mine have frozen (I usually leave them in for 3 hours), I put them in a zip lock bag to save space in my freezer.  Enjoy!

Berry Cheesecake Pops & Happy 4th!

How did I get so lucky to post on Independence Day?  I am honored to post on the 4th of July because I am a patriot.  I get teary-eyed when the national anthem is played and the Stars and Stripes are presented at ballgames.  Every time.

For our followers who are not of the LDS faith, I would like to share a couple of our Articles of Faith--what we believe--that correlate with our celebrations today:

Article of Faith #11--We claim the privilege of worshipping Almighty God according to the dictates of our own conscience, and allow all men the same privilege, let them worship how, where, or what they may.

Article of Faith #12--We believe in being subject to kings, presidents, rulers, and magistrates, in obeying, honoring, and sustaining the law.

I just thought these were very appropriate as we celebrate our freedoms and the principles upon which this great country was established.

Now that I have given you food for thought, here is my food post for today.  Have you seen the new cookbook from our lovely Kate and Sara at OBB?  It is entitled, "Savoring the Seasons with Our Best Bites."  Yummy stuff .  This recipe comes from that book and it is a perfect summer treat for this holiday.

Ingredients:

2 cups assorted berries (I used strawberries and blueberries)*
1/2 cup plus 3 tablespoons powdered sugar, divided
3 oz. cream cheese
1 cup Half-and-Half
1 teaspoon vanilla
2 teaspoons fresh lemon juice

1.  Place berries and 3 tablespoons powdered sugar in a blender or food processor and roughly puree.  Add more sugar, if needed.  You should end up with about 1 cup of berry puree--smooth or chunky. Whatever you want.

2.  Transfer puree to a bowl or measuring cup with a pour spout and set aside.  Wash out food processor and place the cream cheese, half-and-half, vanilla, lemon juice, and 1/2 cup powdered sugar inside.  Puree until smooth--not going to show a picture but it is white and liquid.

3.  Fill popsicle molds, alternating berry mixture and cream cheese mixture.  You can swirl it with a popsicle stick or leave in layers.  Freeze until slightly firm if you are adding your own popsicle stick.  My form came with stick/lids so I just put mine in at the get-go and froze them completely.

4.  To remove from molds, carefully run warm water around the outside of molds until popsicles are loosened.  Store in an airtight container or zip-top bag in the freezer.

*  Next time I make these I am going to try some of my freeze-dried fruit and see how that turns out.  Sounds like a good way to use that fruit from my food storage and it is a healthy snack--pretty much.

Pepperoni Bites

This recipe was so easy to make! My 9 year old daughter actually made these one afternoon for everyone to have as a snack!  Delicious! We like deli pepperoni better than the ones you can get pre-packaged, but you can use whatever you want.  Enjoy!

1 cup AP Flour
1 teaspoon Baking Powder
1 cup Milk
1 egg
1 cup Cheddar Cheese, shredded
1-1/2 cup pepperoni, diced
Pam
Marina sauce

Preheat your oven to 350 degrees.
Into a big mixing bowl add the flour, baking powder and stir. Next add the milk and the egg and blend well with mixer. Then add the cheese and the pepperoni and blend well. Spray the mini muffin tin well and then spoon in the mixture. Be sure not to over fill the mini muffin tin cups.  Bake at 350 degrees for about 25- 30 minutes, or until they are golden brown.  This makes approximately 2 dozen pepperoni bites.

Raspberry Cheese Dip

When I first saw this dish and asked what was in it, I was expecting...well...gross.  It just sounded nasty to me.  And then I tasted it.  Heaven!   This recipe is one of the most-requested recipes among my own collection of favorites and I have gotten several people addicted to it!  My oldest son, who is pickier than anyone else I know, loves this dip.  It gets eaten up in no time whenever I make it.

Ingredients:
4 cups shredded sharp cheddar cheese
1 cup mayo
2 green onions, chopped
12 ounces raspberry preserves
Ritz crackers

1.  Combine cheese, mayo, and onions in mixing bowl.  Fold together until well blended and spread in a shallow dish (pie plate works well).
2.  Spread raspberry preserves across the top of the cheese mixture.  Refrigerate until ready to serve.

Serve with Ritz crackers.

Homemade Fruit & Cream Instant Oatmeal

For several years now I have been saying that I wanted to make my own instant oatmeal packets. Years now.  And finally, thanks to our dear friend PINTEREST, I have found a recipe that I like and have tried it and have fulfilled a dream!  Yay me!  There are many variations to the basic recipe, but I chose the fruit and cream version.  I have a lot of fruit in my food storage that I want to use and this is a perfect way to do that.  I used peach this time, but next time I am trying mango.  Yeah, that fruit.

Ingredients:
3 cups quick-cooking oats
Salt
Small (snack-size) zip baggies
Non Dairy Creamer (I used the non-fat and it is delicious!)
Sugar
Dried or dehydrated fruit

1.  Put 1 cup oats in a food processor and process until powdery.  Set aside in a small bowl.
2.  Put the following in each baggie:  1/4 cup un-powdered oats, 2 T. powdered oats, 1/8 t. salt,
     1 T. creamer, 1 T. Sugar, 2 T. fruit.

3.  Store baggies in an air-tight container.
4.  To serve:  Empty packet into a bowl and add 3/4 cup boiling water.  Stir and let stand for
2 minutes.  For thicker oatmeal, use less water--for thinner, use more water.

Homemade Chicken Pot Pie

I was thinking of giving you a recipe for a diet soup that I love, but then I thought that everyone should know how to make a delicious homemade pot pie for those days that you need a little comfort food! The diet soup can wait for another day!

I make these in batches of 4 and freeze them, and then I have something quick to pull out of the oven for dinner on a busy day. My kids LOVE these! People ask me how many one will feed, and here is my answer: It will feed me 7-8 servings, but it will feed my son Curtis, who is 16, only 2 servings. It would definitely feed 4 really hungry normal people who are not teenage boys.  (smile).

Homemade Chicken Pot Pies

Ingredients:

4 frozen pie shells (or you can make homemade crust)
4 cups cooked, diced chicken
1 large can cream of chicken soup (or 2 small cans - about 20 oz)
1 8 oz package cream cheese, softened
1 1/2 cups baby carrots cut into slices
1 cup frozen peas
1/4 cup (or more) diced onions
4 cups potatoes, diced
1 can of corn (or some frozen corn)
2 chicken bouillon cubes (or 1 if you like less salt)
2 boxes of roll out top crust (This will give you 4 top crusts) I recommend Pillsbury brand - or you can make homemade
1/2 cup flour and 1/2 cup water
1/2 tsp of Poultry Seasoning (or  a little Thyme, Oregano and Sage)
Salt and pepper to taste

Directions:

1. Put the diced potatoes, carrots and onions in a pot. Cover with water. Add the bouillon cube and some salt and pepper. Bring to a boil and cook until the potatoes are done...but not mushy and falling apart.

2. In a small bowl, add 1/2 cup flour to 1/2 cup of water and mix with a fork until smooth. Pour this slowly into boiling pot of vegetables while stirring briskly. This will thicken the water that the vegetables are cooking in. Turn off heat and let it cool down a bit.

3. In a large mixing bowl, beat the cream cheese until smooth with a hand mixer. Add in the cream of chicken soup and poultry seasoning. Mix until well blended. Add the chicken, corn, peas, and the cooked potato/carrot/onion mixture. Mix all ingredients together until well blended.

4. Add this delicious mixture to the pie shells, dividing mixture evenly between the 4 pie shells.

5. Roll out your crust onto the counter. (Cut a heart in the center for a vent hole if you would like - it's so cute!) Place the crust on top of the pie. Fold under the extra crust as neatly as possible around the edges. Then pinch the edge of the crust to seal. If you have no idea how to to that, look up a tutorial. It is so hard to explain in words. But it is easy to do, and everyone has their own way of making their crust edge pretty.

6. If you did not cut a heart into the center of the crust, cut a few vent holes into the top crust. Just take a knife and make a few small cuts.

7. At this point, I put a square of wax paper on top of the pie, then cover with foil and put in the freezer. I suppose you could skip the wax paper if you don't have any.

8. If you want to bake one right away, bake it at 375 degrees for 30 - 45 minutes, depending on how dark you like your crust.

9. When baking from frozen, bake at 350 degrees for 1 hour and 15 minutes.

YOU ARE GOING TO LOVE THESE CHICKEN POT PIES!

Notes:
1. Kids love to help make these! And they love eating them too!

2. These are perfect to have on hand when you need to take someone a dinner, or when you forgot to plan dinner for your own family.

3. We made these for a fund raiser at church to help earn money for girls camp. We sold LOTS of them and people liked them very much!

Emergency Brownie!

Have you ever had an overwhelming craving for a brownie but didn't want the temptation of a whole pan of them?  Yes?  Then you have to try this microwave mug brownie.  Recipes for these are popping up on blogs all over the place.  This particular recipe is one of my 14-year-old son's stand-by recipes.  He tells me that it's gooey-er than a regular baked brownie but that it still hits the spot.  I can always tell when he's been in the kitchen from the tell-tale brownie dregs in the mug on the counter.

If this particular mug brownie recipe doesn't tickle your fancy you are sure to find a plethora of them online.  It took some trial and error before we found the ones that appealed to us the most.
Ingredients:
1/4 cup flour
1/4 cup sugar
2 Tbsp. unsweetened cocoa powder
pinch salt
2 Tbsp. canola oil
2 Tbsp. milk

1.  In a microwaveable mug (or glass canning jar), stir the dry ingredients together.  Try to get out all the lumps.  Add the milk and oil and stir until well-combined.
2.  Microwave on HIGH for one minute.  After that, microwave for 10-15 seconds at a time until it springs back a bit but still has some gooey-ness on top.  My son says it typically won't look done when it really is, and it easily burns if you cook it too long.  It took him a while to get the right time in our microwave...this time it took one minute and thirty seconds.

We love our brownies drizzled with a little warmed up peanut butter and a little ice cream or whipped topping.

Snow Cream

This my friends, is snow cream.  I can't tell you how much of a delicacy this is in the south. Whenever it begins to snow, which isn't too often in the south, you wait and hope it snows for a couple of hours. Because you can't collect the "first snow"! (I don't know why, some older people have always said it wasn't clean.  -smile-)  But, after its been snowing for a while you place really big bowls outside to collect the snow while it falls.  Then you bring it in and add the yummy stuff to it to make it into snow cream!  It is soo good!  We will actually take the risk of driving through terrible weather to get the ingredients needed to make this, because we love this stuff so much.  Everybody has a different recipe. Some people add eggs. (yuck) But, I tend to go with simple recipes and it doesn't get any simpler than this.  If it snows this winter where you live, give this a try. I promise it will make you like the snowy weather much more!

Ingredients:
Lots of Snow, (about 16-20 cups per bowl = 36-40 cups of snow for 2 cans of condensed milk)
Condensed Milk, 2-4 cans
Vanilla flavoring, 1/8 - 1/4 cup ( for 36 cups of snow.)

You begin this with a lot of snow!  A lot of snow! The picture below is the beginnings of our second batch.  The biggest tupperware bowls we owned were needed for this.  LOL!  This picture actually shows you there wasn't enough collected  in the bowls to use both cans of condensed milk.  The bowls have to be packed full and heaping!

Then add one whole can of condensed milk and about 1/4 cup of vanilla. (I know that sounds like a lot, but trust me.)  Then stir and mash.  Stir and mash.  You are going for a creamy texture.  Add snow as you go. You will use both bowls of snow.   The bowls are equivalent to a big stock pot. The biggest one in your set.
Add the other can of condensed milk. But not the whole thing.  Then add a Tbsp or two of the vanilla flavoring.  Stir and mash. It takes a little while to mash out the snow balls in the mixture and get it all creamy. When it looks like the picture below you are finished.  Enjoy! - and put it in the freezer to keep until its all eaten.  ;)

Yummy, yummy!

Boiled Cookies

I had a friend once who thought this was a disgusting name for a cookie.  She said in her family they called them Gorilla Poops.  Not sure why my family's title won the gross-out award over hers.  Anyhow, it's a tried and true recipe that brings back lots of memories for me.  Sunday afternoons were the traditional occasions for these quick treats when I was growing up, and it's a tradition I've kept going in my own family.

Ingredients:
1/4 c. butter
1/2 c. milk
3 Tbsp. cocoa
1/4 tsp. salt
2 c. sugar
1 tsp. vanilla
1/2 c. peanut butter
2 1/2 c. oats (quick or old-fashioned)

1.  Combine the butter, milk, cocoa, salt, and sugar in a large saucepan and bring to a boil.  Cook for 1-2 minutes more and then remove from heat.
2.  Stir in vanilla, peanut butter, and oats.  Drop by spoonfuls onto waxed paper and allow to set.

Makes about 3 dozen

Notes:

  • My personal favorite way to make these is to omit the cocoa from the boiling mixture, and then add in 1/2 cup or so of coconut after the boil.  Yum!
  • I used to always use quick oats until I experimented with old-fashioned, which I use more often.  Quick oats give a bit softer texture, but I like them with the old-fashioned oats better.
  • You can pour the mixture into an 8"x 8" pan, sprayed with cooking spray, but it takes a lot longer to set before you can cut it into bars.
  • My ten-year-old made this batch and has become quite an expert at the process!
  • We like to use a cookie scoop for easy portioning onto the waxed paper.
